Gaolers Kitchen

A unique experience dining behind the wall in the produce garden of the Gaolers Kitchen. Our fruit and vegetable gardens, our fish pond and small flocks of chicken and sheep make us close to self sufficient just like when we first opened back in 1856.

The Gaolers Kitchen is no longer an operative gaol but we continue to stand for the same principles necessity forced it to observe in its early years: less dependence on the outside world, food integrity, and the consumption of local, seasonal produce.

The Gaolers Kitchen consists of several different projects.

The Gaolers Kitchen, Beechworth is our base for running courses and events ranging from day and evening dining and entertainment, through to courses in cooking, gardening, bread making, butchery and more.

The Gaolers Kitchen also caters for events and functions where we work with a wonderful collection of local and organic food and drink producers from the North East of Victoria.

We have access to a wide selection of the very best local and seasonal provisions including milk, eggs, bread, meat, poultry, fish, beers and wines.

Within the various courtyards onsite we grow over a 100 varieties of seasonal fruit and vegetables and keep company with a flock of meat and egg producing chickens and a small flock of sheep ably cared for by two ever vigilant alpacas. Over the cooler months our pool grows out trout fingerlings to full size ready for consumption.

In partnership with Closed Loop Recycling we use the latest Organic Composting Technology to ensure no organic waste ever leaves the site.
